baked chicken + zucchini wedges with garlic & smoked paprika

globe zucchinisZucchini season is here! I harvested the first batch from the garden a few days ago and am eager to find new and exciting ways to use this mild flavored vegetable in the kitchen.  Silly me planted 10 zucchini plants, so I am sure there will be plenty of opportunities.  Since I have been craving french fries for the past week or so, I thought this would be a great opportunity to give zucchini “fries” a chance. This particular recipe is very easy and relatively healthy with a slightly spicy, deliciously smoky after taste.

here’s what you need:

2 globe zucchinis, sliced into wedges, salted and patted dry to remove excess water
500 grams chicken breast, pounded thinly

¼ tsp smoked paprika
¼ tsp spicy paprika
½ tsp garlic powder
½ tsp onion powder
1 tsp salt
¼ tsp black pepperbreading
1 tsp finely chopped fresh oregano
1 tsp finely chopped fresh marjoram
2 cups plain bread crumbs

egg dip
2 eggs
¼ tsp smoked paprika
½ tsp fresh oregano, finely chopped
½ tsp fresh marjoram, finely chopped
¼ tsp salt
¼ tsp black pepper

Cooking spray

  1. baked zucchini wedgesMix all of the ingredients for the breading in one shallow dish and the ingredients for the egg dip in another.
  2. Dip the chicken breasts, one by one, into the egg mixture and then in the bread crumb mixture. To ensure even coating, use a fork to lightly press down on the chicken. Transfer the chicken to a baking pan lined with parchment paper.
  3. Preheat oven to 200C/400F.
  4. Repeat the breading process with the zucchini wedges.
  5. Once the zucchini and chicken are arranged on the baking pan, coat evenly with cooking spray and place in the oven.
  6. Bake for 10 minutes and remove the tray from the oven. Flip the zucchini pieces and chicken breasts over and spray with cooking spray.  Return the tray to the oven.
  7. Bake for an additional 7 – 10 minutes until the chicken is cooked thoroughly and the zucchini wedges are crispy. Remove from the oven and serve immediately.
